Our breakfast burrito adapts to any and all conditions, whether that means eating it in the evening (no judgment here!) or on the go while finally enjoying some time laying out in the sun. It's still hearty enough for those cold chilly mornings when third or fourth winter makes a sudden cameo, while fresh enough for those hotter days when it feels like the whole world is outside looking at clouds and listening to the birds. Ultimate Spring Weather Breakfast Burrito

Ingredients:

4 large flour tortillas

8 scrambled eggs

1 lb breakfast sausage or bacon, cooked and crumbled

2 cups hash browns, crispy

1½ cups sharp cheddar cheese, shredded

1 bell pepper, diced

½ red onion, diced

1 jalapeño, minced (optional)

½ cup sour cream

¼ cup fresh cilantro, chopped

Hot sauce to taste

Salt and pepper

Instructions:

Sauté peppers and onions until tender, about 5 minutes

Warm tortillas until pliable

Layer each tortilla with eggs, meat, hash browns, sautéed vegetables, and cheese

Add a dollop of sour cream, sprinkle of cilantro, and hot sauce

Fold in sides, then roll tightly from bottom to top

Serve immediately or wrap in foil for on-the-go convenience
