While millions of Americans wait to see if Punxsutawney Phil spots his shadow today, there's another February 2nd tradition happening across the Atlantic that shares the same historical foundation. In France, families gather in kitchens nationwide to flip crepes for Chandeleur, a celebration that, like Groundhog Day, stems from Candlemas, a Christian festival commemorating the presentation of Jesus at the temple 40 days after his birth. February 2nd falls roughly halfway between the winter solstice and spring equinox, making it a significant date for communities historically dependent on agricultural cycles and seasonal weather patterns.:

The weather connection between these two celebrations runs deeper than coincidental timing. European Candlemas traditions included various folk sayings about predicting the remaining length of winter based on February 2nd weather conditions. German immigrants brought these Candlemas customs to Pennsylvania, where the tradition eventually evolved into the groundhog shadow folklore we know today. In France, the holiday maintained its focus on food traditions, with families making crepes that are traditionally associated with the round shape and golden color of the sun.

Today, as we check weather forecasts and debate Phil's prediction accuracy, we can honor this ancient weather-watching tradition by making our own "sun cakes." Golden Sun Crepes Recipe

Makes 12 crepes

Ingredients:

1½ cups all-purpose flour

3 large eggs

1¾ cups whole milk

3 tablespoons melted butter, plus extra for cooking

2 tablespoons honey

1 teaspoon vanilla extract

Pinch of salt

For the "Spring Hope" Filling:

8 oz cream cheese, softened

¼ cup powdered sugar

2 tablespoons fresh orange juice

1 cup fresh berries or seasonal fruit

Instructions:

Whisk all crepe ingredients until smooth. Let batter rest 30 minutes.

Heat a non-stick pan over medium heat. Brush with butter and pour ¼ cup batter, swirling to coat the bottom.

Cook until edges are golden (about 2 minutes), flip, and cook 30 seconds more.

Mix filling ingredients and spread on each crepe with fruit. Roll and serve warm.
